You know it's the middle of summer because it's " peach time"! All the produce stands and farmer's markets have baskets and baskets of beautiful peaches. Every summer when we would go to Gene and George's we would always take home a huge basket of peaches with us because you sure couldn't get them in Florida unless you found someone who had gone to Georgia or Alabama to get them and then they would resale them for such a high price, you would have to mortgage the house to get a whole basket of them. I decided to can peach pie filling with the ones we bought when we stopped at Durbins north of Montgomery. I have " a pie plate for two" that only takes a quart jar of filling and it makes a pie big enough for two people to have a couple of slices and you aren't stuck with this huge pie to eat before it goes bad or your blood sugar goes to the moon and back. We sure will enjoy our little pies with our tea this winter and remember our hot summer days, the trip south for C. Mac Johnson Day and that it will be fresh peach time again before we know it.
